Crudités is essentially raw vegetables. The word (always used in its plural form) refers to dishes composed by fresh raw vegetables, with a dressing or not, usually served as a first course.
For most Crudités, Vinaigrette is the best choice. It is, of course, better to prepare it yourself and choose the best olive oil. You can then adjust and choose the right amount of vinegar and lemon juice.
Crudités are an endless source of creativity if the original products are good. The first rule is to value the quality of the vegetables, the ripeness and the season.

In certain type of pregnancy complication due to toxoplasmosis, pregnant woman should be particularly careful when preparing Crudités. The Toxoplasmosis parasit which do not survive high temperatures (cooking), propagates by ingestion and can be present on the ground surrounding vegetables.
In order to avoid any risk, always use the following rules:
- Always clean correctly the vegetables before serving
- Use a different knife for cutting vegetables than the one used for meat and potatoes
- Also use a different cutting plate for meat and potatoes
